Chocolate Chip Banana Cookies

With Compliment from The Divine Cookbook everyday cooking, I love to be more adventous sometime but with limited ingredients, I have learn to keep using the same ingredient but different receipes!

These cookies are very easy and fast to make. It make an excellent clean mess and fuss free to let the little baker try.
Not only they are tasty, the banana smell can fill the jar with the bbbbb smell!

Ingredients
1 Cup of butter (225 g) Softened
1 cup of sugar (Brown)
1 cup of banana - at least abt 2 large bananas - mashed
2 cups of all purpose flour (**)
1/2 tsp of salt (**)
1 tsp baking soda (**)
2 cups semisweet chocolate chips

Instructions
Preheat the oven at 180'c
Lightly grease  cookies sheets 
Cream the butter and sugar till fluffy and light - about 4-5 mins
Add mashed banana and beat for another 2-3 mins
sift the flour (**) and salt, baking soda into the mixture and mix and stir.
Stir in chocolate chips

Drop by a tablespoon each of the mixture on the cookies sheet
Bake for 12-15 mins or until lightly browned and set but still soft
























Chocolate-Chip melts with Butter Cake

So moist that I love to enjoy my buttery cake with a cup of coffee on a raining day, of course.
Definately bright up your life and mood!


This is a very simple cake recipe with compliment from my little baker to assist in placing and decorating.

Xmas Gingerbread man

I have been so tempted to grab a new oven after waving good bye to my old over-used 8 years old oven.
Gone finally and after waiting for my little baker to be more sensible to understand simple instructions, at last we got her involvement into baking with me

We did a pre-xmas gingerbread man. The old fairy tales and songs about Gingerbread man. 
This recipe is easy mix except with a lot of assistance from helper to help the little baker to co-ordinate the cutting edge of the gingerbread man.


These gingerbread men are both fun and easy to make, and, what's more, the kids will love them!

Ingredients
Melted butter, to grease
125g butter, at room temperature
100g (1/2 cup, firmly packed) brown sugar
125ml (1/2 cup) golden syrup
1 egg, separated
375g (2 1/2 cups) plain flour
1 tbs ground ginger
1 tsp mixed spice
1 tsp bicarbonate of soda
Plain flour, to dust
150g (1 cup) pure icing sugar, sifted
8-10 drops red liquid food colouring
8-10 drops green liquid food colouring
Smarties, to decorate

Method
Preheat oven to 180°C. Brush 2 baking trays with melted butter to lightly grease.
Use an electric beater to beat the butter and sugar in a bowl until pale and creamy. 
Add the golden syrup and egg yolk and beat until combined. 
Stir in the flour, ginger, mixed spice and bicarbonate of soda. Turn onto a lightly floured surface and knead until smooth. Press dough into a disc. Cover with plastic wrap and place in the fridge for 30 minutes to rest.
Meanwhile, place egg white in a clean, dry bowl. Use an electric beater to beat until soft peaks form. 
Gradually add icing sugar and beat until stiff peaks form. 
Divide icing among 3 bowls. Cover 1 bowl with plastic wrap and place in the fridge. 
Add red colouring to 1 bowl and stir until combined. 
Add green colouring to remaining bowl and stir until combined. 
Cover with plastic wrap and place in the fridge.
Place the dough between 2 sheets of baking paper and roll out until about 4mm thick. 
Use a 9cm gingerbread man cutter to cut out shapes. Place on trays about 3cm apart. 
Repeat with any excess dough.
Bake in oven for 10 minutes or until brown.
 Remove from oven. Transfer to a rack to cool.
Place prepared icings in small plastic bags. Cut a small hole in a corner of each bag. Pipe icing over gingerbread men to decorate. Finish with Smarties.
Notes
Allow 30 minutes resting time.

Oreo Cheese Cupcake with Cheese Cream

















Ingredient for Cupcake
•1 egg
•1/2 cup milk
•1/4 cup butter, melted
•1 1/2 cups all-purpose flour
•1/2 cup granulated sugar
•2 tsp. baking powder
•1/2 cup semisweet chocolate chips
•1 cup Oreo cookies, chopped coarsely


Ingredients for Frosting (Icing)
-200g Cream cheese
-Icing sugar
-Cream them together till whippy and fluffy, place in fridge for topping later.

Instructions:
1.Beat together the egg, milk and butter.

2.Stir in the remaining ingredients except the Oreos.

3.Fold in Oreos; batter will be lumpy.

4.Spoon into greased/lined muffin tins and bake at 160-180C for 15-20 minutes.

Lastly, cream icing on top on muffin and enjoy with a cup of tea!

Oreo Banana Muffin





The best part of baking this is : never waste your bunch of banana! Use them before it goes to waste.

Ingredients:
-1 -2 large bananas
-1 cup of full cream milk
-1 egg
-60g butter ( melted )
-170g Self-raising flour
-120g caster sugar
-50g almond bits
-50g white button (bakeable) bits

Instructions
-Mash Banana, add milk, egg and melted butter
-Sift flour, add sugar and white bits into banana mixture and mix well until all ingredients are combined well
- Spoon into well greased muffin tin
- Bake at 190'c at 20 mins

You may choose to top up with royal icing and decorate with butterflies, loves, and kisses
Royal Icing: Beat 5 egg whites with 300g of icing sugar. Beat till mixture become fluffy and leave in fridge to cool and harden before icing....

Mocha Rich Chocolate Cake



I made a quick browse this round to whip up this moist rich chocolate cake for my craving and I loved it all... and it is almost so moist and chocolidecious!

With Complimentary recipe
Ingredients
-260g dark chocolate ( chopped into small pieces )
-170g butter, diced
-200g caster sugar
-3 large eggs
-70g plain flour
-2tbsp of instant coffee dissolved into 2 tbsp of boiling water OR you may use 2 tbsp of Kahlua
( which is coffee liqueur)
-thick cream to serve or royal icining to serve


Instructions
-Preheat oven at 160'c. Grease a 20cm spring form tin and line with greaseproof paper
-Place chocolate and butter in a heatproof bowl, double boiled to melt the mixture
-Remove from heat and leave to cool for 5 mins
-Stir in sugar and beat in the eggs ( 1 at a time )
-Sift flour and stir mixture
-Stir in Coffee
-Transfer to bake

Rich Marble Butter Cake




This is a very simple rich butter marble cake with the below recipe as a compliment to all viewers.

Ingredient 1
250 butter
200-250g castor sugar
4 eggs
1 tsp vanilla
250g self raising flour
4tbsp milk - you can get the full cream milk in drinking packet form
1tbsp cocoa powder, mix with 3tbsp of hot water- stir it throughly ***

Method 1

-Put butter and sugar and use low speed to mix evenly.
-Change to medium speed and beat until light.
-Add 1st egg (1 at a time)
-Beat till all creamy and scape down sides of ingredient to get a better mix
-Add in vanilla and mix well
- Divide flour into 3 portions and slowly mix into mixture . (USE LOW SPEED)
-Finally add in milk
-Use 1/4 portion of the butter portion mixture to mix with Cocoa Mixture**
-Pour 3/4 into a square 22cm lined greased tinned baking tray
-Use a spoon and scoop cocoa mixture on top of butter mixture.
-Use a knife to divide evenly the mixture
-Bake 180'C for 45 mins
